BRING ON THE BURGERS

In addition to serving veggie burgers the traditional way (buns, lettuce, and tomato, etc), try layering them in steam table pans and creating sloppy Joe casseroles, individual "Salisbury steaks," or tamale pies.
SPUDS GALORE
Simplot is offering several convenience-style vegetable side dishes, which can be easily made into vegan entrees. Under the ROASTWORKS name, the FLAME-ROASTED REDSKINS AND VEGETABLES (red rose potatoes tossed with red and green pepper strips and yellow onions, seasoned with chili), PEPPERS AND ONIONS (bell peppers and onions with a fajita-style seasoning), and the FLAME-ROASTED SWEET CORN AND PEPPERS (cut corn and red, green and yellow peppers with a Southwestern seasoning) are precooked, needing only 10-15 minutes in the oven. They come 6-2.5 pounders packed to a case. Served on a bed of cooked beans or grains, these products make fast and colorful dishes. FUNGUS AMONGUS
Marinated Portabello Mushrooms are available from Phillips Foods, Kennett Square, PA. The mushrooms have a ninety-day shelf-life (refrigerated) and are available as caps or slices. They come 2/8-pound tubs packed to a case. These mushrooms work well as a main entrée ingredient and in salads, soups, stir-fries, and pastas. Use these portabellos for elegant entrees (grill with garlic and basil) and for cold entrée salads (served on a bed of chilled couscous tossed with chopped cilantro).
