1.  Calling all food technologists: Vegetarian ingredients continue to become more and more popular. Here are commonly used vegetarian ingredients for people formulating, or creating, processed vegetarian products:

a.  From Ottens Flavors, the Vegetarian Savory Plus™ flavor line: Otten has liquid “beef” and “chicken” vegan flavors that are kosher, pareve, and non-GMO, and which simulate broth, fried, grilled, baked, and roasted flavors. Ottens suggests using them in frozen and refrigerated entrées, salad dressings, sauces, soup, gravies, snacks, and meat analogs. For information call (215) 365-7800.

b.  Comax Flavors offers vegetarian meat-type flavors for use in soups, bouillon, soyfoods, and other animal-free dishes. The “chicken” flavor is available as a liquid or powder and are oil- and water-soluble. The natural non-GMO “chicken” flavor can stand up to the heat of canning or pasteurizing and is available as a powder and a spray. The “ham” flavor is available in powder or liquid. c.  DSM Food Ingredients’ Gb Select™ YB is a vegan yeast extract blend that has no added MSG or HVP (hydrolyzed vegetable protein). 2.  Athens Foods offers frozen mini phyllo dough shells. These are individual dessert shells that come fully baked in plain-, chocolate-, or graham-flavored. They can be thawed and filled, or baked again with filling. Fill plain phyllo shells with pie filling, soy yogurt and fruit, sorbet and chopped nuts, soy pudding, or tofu cheesecake for sweet menu items or five-bean chili, vegan “ground” beef, chopped Tofurky™ and gravy, or avocado and salsa for savory dishes. 3.  The Juice Company’s new Smoothiepacks™ come in ready-to-drink, liter-size containers. The product is kosher and is available in mango, peach, raspberry, and passion fruit. Ingredients include crushed bananas, crushed peaches, orange juice from concentrate (36%), pressed apples, and crushed passion fruit. Sell the smoothies as a grab-and-go snack or use as a base for chilled beverages blended with sorbet, soy or rice ice cream, or frozen fruit. Combine smoothies with tofu and freeze as a dessert.
